10/12 cocoa powders are the most commonly used cocoa powders in all applications. These powders can be used in a wide range of products from baking, bars, nutrition, icings, desserts, dairy and more. When using a higher fat powder, there is a chance of fat bloom in applications; with a 10/12 powder the chances are minimized.
22/24 cocoa powders are generally used in premium beverage and dairy applications. The higher fat content provides for a richer mouth feel than low fat powders. Typically, higher fat powders absorb less water in bakery applications, which can lead to less hardness in certain applications.
